One-Pot Pasta Primavera

A simple, colorful pasta dish with fresh vegetables, perfect for a quick and nutritious meal.

Ingredients

  • 8 oz (225g) pasta (penne, fusilli, or your choice)
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup frozen peas
  • 2 cups vegetable broth
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Directions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until fragrant, about 2-3 minutes.

  2. Add zucchini, red bell pepper, cherry tomatoes, and frozen peas. Cook for 5 minutes, stirring occasionally.

  3. Add pasta and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until pasta is cooked and most of the liquid is absorbed, about 10-12 minutes.

  4. Stir in grated Parmesan cheese, if using. Season with salt and pepper to taste.

  5. Garnish with fresh basil before serving.
