Ingredients
- 8 oz (225g) pasta (penne, fusilli, or your choice)
 - 1 tablespoon olive oil
 - 1 small onion, chopped
 - 2 cloves garlic, minced
 - 1 zucchini, chopped
 - 1 red bell pepper, chopped
 - 1 cup cherry tomatoes, halved
 - 1 cup frozen peas
 - 2 cups vegetable broth
 - 1/4 cup grated Parmesan cheese (optional)
 - Salt and pepper, to taste
 - Fresh basil, for garnish
 
Directions

In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until fragrant, about 2-3 minutes.
 - 
Add zucchini, red bell pepper, cherry tomatoes, and frozen peas. Cook for 5 minutes, stirring occasionally.
 - 
Add pasta and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until pasta is cooked and most of the liquid is absorbed, about 10-12 minutes.

Stir in grated Parmesan cheese, if using. Season with salt and pepper to taste.
 - 
Garnish with fresh basil before serving.
