Prep Time: 10 minutes
Cook Time: 20 minutes
Servings: 4
Ingredients
- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz fettuccine pasta
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Directions
-
In a large skillet or pot, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper, then add them to the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
-
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
-
Pour in chicken broth, heavy cream, and fettuccine pasta. Bring to a boil, then reduce heat to medium-low. Simmer uncovered, stirring occasionally, until pasta is tender and liquid has reduced and thickened, about 12-15 minutes.
-
Stir in grated Parmesan cheese until melted and well combined.
-
Return cooked chicken to the skillet and stir to combine with the pasta.
-
Serve immediately, garnished with chopped fresh parsley.
