One-Pot Creamy Chicken Alfredo Pasta

Creamy and comforting chicken Alfredo pasta cooked in one pot for easy cleanup and a delicious meal.

Ingredients

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz fettuccine pasta
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Directions

  1. In a large skillet or pot, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper, then add them to the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

  2. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.

  3. Pour in chicken broth, heavy cream, and fettuccine pasta. Bring to a boil, then reduce heat to medium-low. Simmer uncovered, stirring occasionally, until pasta is tender and liquid has reduced and thickened, about 12-15 minutes.

  4. Stir in grated Parmesan cheese until melted and well combined.

  5. Return cooked chicken to the skillet and stir to combine with the pasta.

  6. Serve immediately, garnished with chopped fresh parsley.
