Ingredients
- 1 cup rice (white or brown)
- 1 tablespoon vegetable oil
- 1 onion, thinly sliced
- 2 bell peppers (any color), sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- Sesame seeds (optional, for garnish)

Cook rice according to package instructions.

In a large skillet or wok, heat vegetable oil over medium-high heat. Add onion and cook for 2 minutes until softened.

Add bell peppers, broccoli, and carrots to the skillet. Stir-fry for about 5-7 minutes until vegetables are tender-crisp.

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, brown sugar, and sesame oil.

Pour the sauce over the vegetables in the skillet. Stir well to combine and cook for another 2-3 minutes until heated through and sauce thickens slightly.
